Chewy, nutty, and coated in snappy dark chocolate—this Nut Butter Date Bark is the ultimate no-bake, healthy treat to satisfy those candy bar cravings. Think of it as a date Snickers, but made with simple, real ingredients and no refined sugar.
Sweet Medjool dates form a caramel-like base, layered with a thick spread of our Maple Creemee Vanilla Cashew Butter and topped with melted chocolate for that satisfying snap. A sprinkle of flaky sea salt and crunchy nuts or seeds takes it over the top.
Freeze it, break it into pieces, and enjoy an easy chocolate date bark that delivers big on flavor—without the sugar crash.

Ingredients
- 10–12 Medjool dates, pitted and halved
-
½ cup Maple Creemee Vanilla Cashew Butter or other thick nut butter
-
½ cup dark chocolate, gently melted with a spoon of coconut oil
-
2 tbsp chopped nuts or seeds (pepitas, sunflower seeds, almonds, walnuts)
-
Flaky sea salt
Directions
Flatten the Dates – Arrange chewy Medjool dates in a single layer on a parchment-lined baking sheet, pressing them together to form a solid base. For best texture, place them between 2 sheets of parchment paper and gently pound flat with a rolling pin.
Spread the Nut Butter – Using a spoon or spatula, spread an even layer of cashew butter over the dates.
Drizzle the Chocolate – Pour the melted dark chocolate over the nut butter, spreading it evenly.
Top it Off – Sprinkle with crunchy nuts or seeds and flaky sea salt.
Chill & Set – Freeze for at least 30 minutes until firm.
Cut Into Pieces – Once set, cut into squares and store in freezer. Enjoy!
Recipe Note
Variations
- Crunchy – Add puffed rice or toasted coconut for texture.
- Spiced – Mix a pinch of cinnamon or chili powder into the chocolate for a warm or spicy kick.
- PB&J Inspired – Dot with dried cranberries or freeze-dried strawberries before freezing.
This homemade chocolate date bark is an easy, no-bake dessert that keeps well in the fridge for a grab-and-go healthy snack. Try it once, and it might just replace your favorite candy bar!
