I was sampling our nut butters to a wonderful group of folks vacationing on Cape Cod in Massachusetts. This woman kept asking how to serve our products -- and that she loved crostinis. She kept talking about crostinis. In addition to the Savory Walnut-Balsamic Crostinis, this recipe is what I also recommended for her to make.
Top it with a schmear of nut butter, a few dots of goat cheese, some thyme, and balsamic. You and your guests will love it.
It takes 5 min to throw together, and you can't mess it up. Wow your guests. Keep them coming back. Or have a larger savory toast for yourself. :)
Ingredients
-
1 baguette, cut into ¼”+ thick slices (Substitute crackers)
-
"Maple Creemee” - Vanilla Cashew Butter with Pecans
-
Strawberries, rinsed and sliced vertically
-
Goat cheese (Can omit, or see vegan swaps in notes)
-
Fresh thyme and/or rosemary
-
Balsamic vinegar
-
Honey or Vermont maple syrup
-
Cinnamon
-
Flakey salt
Option 1: Savory Toppings
Option 2: Sweet Toppings
Directions
OPTIONAL: Toast slices in a 350F oven for 5-10 minutes OR use a toaster
Spread with a layer of nut butter to the edges of the bread
Arrange sliced strawberries in a shingled-like pattern
Option 1: Savory
If using, distribute crumbles of goat cheese over the strawberry slices
Sprinkle with fresh thyme. If using rosemary, finely mince first.
Drizzle with balsamic and serve!
Option 2: Sweet
Drizzle honey or maple syrup over bread
Dust with cinnamon add a pinch of flakey salt and serve!
Recipe Note
Vegan swaps for goat cheese
- Vegan goat cheese: see this 5-star recipe - it's a bit of work but might be worth trying
- Vegan cream cheese: use dots of cream cheese instead
- Diced avocado: although not cheesy, it's creamy and will go great with herbs and balsamic
- Tofu feta: Crumbled tofu marinated in vinegar and herbs makes a great substitute for crumbled goat cheese
