Directions
Preheat oven to 325F/160C
Combine wet ingredients in a microwave safe bowl, and microwave for 30-60 seconds, or heat and stir in a small pot on the stove. We want the mixture to be thinner to make it easier to mix with the dry ingredients.
While wet ingredients are getting heated, stir dry ingredients in a separate large bowl.
Pour wet ingredients into the large bowl containing the dry ingredients, and mix thoroughly. Be persistent and patient, and make sure all dry ingredients are no longer dry. If needed, add more nut butter and maple syrup.
Line a baking sheet with parchment paper, pour on granola mixture, and pat down to 1/2 inch thick, so the granola will "cluster up".
Bake in preheated oven until browned, about 30 min, stirring halfway through.
Leave to cool, and enjoy! Granola will harden as it cools. Store in an airtight container at room temp.
