Inspired by the dark silhouette of the moon during Vermont's 2024 Solar Eclipse, this recipe blends our coffee and cacao nib nut butter ("Mud Season") with honey, oats, and cacao powder, creating a deep not-too-sweet chocolaty experience that mirrors the darkened skies.
With a touch of lemon zest for a sunny burst against the dark chocolate, this snack is quick to prepare and keeps you energized well beyond the eclipse.
Enjoy this special treat while watching the moon obscure the sun—a perfect pairing for a stellar viewing experience.
Ingredients

½ cup old-fashioned oats

⅓ cup “Mud Season” (Crunchy Cacao Nib & Coffee Nut Butter)

2-3 tablespoons honey

2 tablespoons cacao powder

Zest of ½ lemon

splash of vanilla extract

pinch of salt

2 tablespoons finely chopped chocolate

1-2 tablespoons cacao powder

Coating
Directions
In a food processor, combine all ingredients except chopped chocolate and ‘Coating’ ingredients
Pulse mixture until ingredients are blended together. Try packing together a tablespoon-sized ball. If it’s too dry, add a spoonful of nut butter or honey until it’s sticky enough.
Once the desired texture is achieved, mix in the chopped chocolate. In a smaller bowl, add ‘Coating’ ingredients.
Pack and roll oat mixture into grape-sized bites and toss to coat in the ‘Coating’ mixture.
Store in fridge for 1 week, or freezer for 6 months. Enjoy!

After being forced (haha) to taste test Kent’s Blackout Bliss Bites I was hooked. I came home the next day and made them. Tastes like a truffle…adding to my charcuterie board tonight!
