2 Cup rolled oats
¼ Cup honey
¼ Cup brown sugar
¾ Cup crispy rice cereal
½ Cup almonds, sliced
4 Tbs coconut oil, unsalted
¼ Cup mini semi-sweet chocolate chips
Heat a medium saucepan or pot on medium-low heat. Add nut butter, honey, brown sugar, and oil.
Stir to combine all ingredients until dissolved. Set the pot aside to cool to room temperature.
In a large bowl combine rice cereal, oats, almonds, espresso powder, and cocoa powder. Mix until all ingredients are combined.
Pour wet mixture into the bowl and mix ingredients thoroughly together. Set the bowl aside to let cool or reach room temperature. Then mix in the chocolate chips.
Place granola mixture in bar molds or loaf pan and place in the fridge for one to two hours. Remove bars from the mold and cut as needed. Buon Appetito!
