Another spin on the classic nut butter and jelly sandwich.
These bars are great for when you need a sweet fix, but want to enjoy something a little more nutritious.

Ingredients

2 cups (160 grams) rolled oats

1 cup (256 grams) of Our Almond, Pecan, and Walnut Nut Butter - "The High Bar"

2 tablespoons (30 grams) Vermont Maple Syrup

1 cup pitted dates (about 12)

.5 cup (128 grams) of Our Almond, Cashew, and Pecan Nut Butter - "The New Favorite"

2 cups (280 grams) frozen raspberries

1 teaspoon (5 grams) Vermont Maple Syrup

1 teaspoon (5 grams) lemon juice
-
2 tablespoons (24 grams) chia seeds
-
1.5 cups chocolate (360 grams), chips or chopped bar
-
.75 cup (180 grams) coconut cream
Base Layer

Directions
Base Layer
In a food processor, combine nut butter, oats, dates and maple syrup. Blend about 1-2 minutes, until a dough forms.
Press into the bottom of a parchment lined 8x8 baking pan.
Middle Layer
Spread on 1/2 cup nut butter over base in a thin layer. Place in freezer while you make the jelly.
Homemade Jelly Layer
In a medium sized sauce pan over medium heat, add raspberries, maple syrup and lemon juice. Cover and cook 10-15 minutes.
Remove from heat and add chia seeds. Allow to cool 10 minutes. Jelly will thicken as it cools.
Remove the baking pan with the base and nut butter from the freezer. Spread jelly in an even layer. Place back in freezer.
Chocolate Ganache Top Layer
Place chocolate chips in a mixing bowl. Heat coconut cream over medium heat and stir constantly until almost to a boil. Pour hot coconut cream over chocolate chips and allow to sit for 5 minutes.
Whisk chocolate until melted and you have a smooth ganache. Pour over jelly and smooth into an even layer. Freeze for at least one hour before cutting.
Final Steps
Store in freezer. Allow bars to thaw 15-20 minutes before enjoying!
