Chilled soba noodles tossed in a rich nut butter–ginger sauce with fresh herbs—an easy, crowd-pleasing dish.
Ingredients

1 ~8 oz package soba noodles

⅓ cup Almond Pecan Cashew Nut Butter “The New Favorite”
- 1½ tbsp soy sauce
- 1 tbsp rice vinegar or lime juice
- 1 tbsp maple syrup
- 1 tsp sesame oil
- 1 garlic clove, grated
- 1 small knob fresh ginger, grated (or ½ tsp ground ginger)

1 tsp hot sauce, like sriracha
- 2 scallions, thinly sliced
- ¼ cup fresh cilantro, torn or chopped
- Garnish: scallion, cilantro, chopped cashews

Directions
- Cook soba noodles per package directions (3–5 min), rinse under cold water, and toss with sesame oil.
- Whisk sauce ingredients until smooth, thinning with water as needed.
- Toss noodles with sauce, scallions, and cilantro. Garnish before serving.
