I’ve always had a soft spot for a good stuffed date, but these really take things up a notch. They're covered in chocolate and filled with some of the most incredible craft nut butter I’ve ever tasted. Truly something special. I brought a batch to my book club and everyone couldn’t stop talking about them. It’s safe to say they’ll be making a regular appearance in our kitchen from now on.

Ingredients

12 pieces medjool dates, pitted

⅓ cup “Mud Season” - Coffee & Cacao Nib Nut Butter

1 cup semi-sweet chocolate chips

1 tbsp coconut oil

Flakey salt (optional)
Directions
Prepare a freezer-safe baking sheet by lining it with parchment paper.
If your dates aren’t already pitted, remove the pit and stem. Gently open each one without splitting it completely in half.
Fill the center of each date with a spoonful of nut butter.
In a microwave-safe bowl, melt the chocolate with 1 tablespoon of coconut oil, stirring until smooth.
Dip each stuffed date into the melted chocolate, making sure it’s fully coated. Let any excess chocolate drip off, then place it on the lined baking sheet. Sprinkle a pinch of flaky salt on top.
Freeze the coated dates for 30 minutes to 1 hour, or until the chocolate is fully set.
Before serving, let the dates sit at room temperature for 30 minutes to an hour so they soften for the perfect bite.
Store any leftovers in the fridge.
