This is a fun, better-for-you bark with all the texture. I LOVE a snappy, well-tempered dark chocolate, but sometimes it’s hard to justify eating more than a few squares. This recipe fixes that—it’s got fiber and complex carbs from the oats, plus a wonderful crunch and slight chew to keep things interesting. It’s perfect for a post-dinner treat when you’re not ready for the night to end, or as a little something to get you through that afternoon slump. You can top it with anything—try coconut for a German chocolate cake vibe. It might seem a little weird when you’re spreading it in the pan, but trust the process! Freeze, break into pieces, and enjoy your sweet escape whenever you need it.
Ingredients
-
½ cup Mixed Up’s Cacao Cashew Spread
- 2 tablespoons coconut oil
-
1 cup rolled oats
- 2 tablespoons maple syrup
-
Toppings: Crushed cashews, cacao nibs, flakey salt
Directions
Line a small pan with parchment paper
In a small bowl, mix oats with maple syrup and regular salt
In a microwave safe dish, gently warm cacao spread and coconut oil until just mixable. Combine with oat mixture.
Spread evenly in pan, then scatter on toppings
Freeze 2 hours and break into pieces
Enjoy! Store in freezer when not eating. Keep up to 6 months.
