Pistachio spreads are trending right now. I've had plenty suggest I should make a pistachio spread. I know we could make an amazing one, but we don't make me-too products. We innovate.

I had some extra pepitas one day. I've had a formula in my head to make a pistachio spread, one with similar ratios as our Cacao Cashew Spread. And I had something green (like pistachios) that I could turn into something tasty (we hate wasting food). I whizzed it up on my countertop food processor. I called it the 'pistachio-free pistachio spread'.

I sampled it to friends and family: "Woah. *Goes for another spoonful.* If there's no pistachios in it, then what's in it?" Chef's secret. Buuuuuut.....

INGREDIENTS: pepitas, vermont maple sugar, california extra virgin olive oil, sea salt, madagascar vanilla bean.

It has this pistachio biscotti-like flavor to it. Cookie-like.

I was waiting for a day in our production space where we had a little extra time to do something else. I had just a few dozen pounds of pepitas I had nothing for. I lightly roasted them, blended them up, and jarred them in glass. 

It may be the best thing we've made to date that very few will get to experience. Only those who we feel should get a jar, will get one. And that's you. 

NOTE: Now before you start asking 'why don't you make this?! Its SO good.' It's not that simple. We have a very very small team. It's me, and my 2 part-time production team members, and I get some help here and there at events...sometimes. Other than that, I do marketing, production planning, events, and operations solo. It's easier said than done to launch another product -- we usually have to decide which product to get rid of to do that -- and our current line is making tons of customers (like you, our retailers, and distributors) happy. SO, we may one day launch this product because it IS REALLY REALLY GOOD. But for now, enjoy it while it lasts. I know you'll love it. :)
