Mint gives chocolate a little extra brightness and energy, and this fudge keeps things simple. It’s made with just 4 pantry ingredients, takes 5 minutes to throw together, and is super low in sugar. It’s perfect for those moments when you want something sweet after dinner without feeling weighed down, or when you need a quick treat to share with friends. Easy, delicious, and made with ingredients you probably already have on hand.
Ingredients

1 cup Mixed Up’s Cacao Cashew Spread
- 3 tablespoons coconut oil
- ¼ teaspoon peppermint extract
- 2 tablespoons cacao nibs
- Pinch of salt
Directions
Line a loaf pan with parchment paper, or prep muffin liners.
In a microwave safe dish, gently warm cacao spread and coconut oil. Add peppermint extract, then stir until combined.
Pour mixture into pan, then sprinkle with cacao nibs and salt.
Freeze 2 hours, then cut into squares.
Enjoy! Keep in freezer for up to 6 months.
