Chocolate Covered Dates with Nut Butter

Ingredients

8 medjool dates
-
3-4 tablespoons “Strawberry Creemee” - Our Strawberry-Vanilla Cashew Butter (or other nut butter)

1/4 cup semi-sweet chocolate chips or chopped dark chocolate

1 teaspoon oil of choice

Optional garnish: Coconut flakes or flakey salt
Directions
Prepare the Dates: Take each date and make a lengthwise cut down one side, being careful not to slice all the way through. Remove the pit.
Fill with Nut Butter: Lay the cut dates on parchment paper. Stuff enough nut butter to fill the date without overflowing.
Melt the Chocolate: Combine the chocolate and oil in a microwave-safe bowl. Heat in the microwave, stirring every 15 seconds until smooth.
Coat the Dates: Dip each date into the chocolate. It helps to use a spoon and a fork to help coat the date and allow excess chocolate to drop away.
Add Garnish (Optional): Sprinkle coconut flakes or salt over the dates while the chocolate is still wet.
Chill: Place the parchment paper on a plate, baking sheet, or cutting board, and refrigerate the dates for about an hour until the chocolate hardens.
